Ragi oats jaggery cookie – kids-friendly

ingridients for Ragi oats jaggery cookie
1 cup popped ragi flour
2/3 cup rolled oats
1/3 cup whole wheat flour
1/2 cup ghee/butter at room temperature
3/4 cup sieved jaggery powder
3-4 tbs milk
1 tsp cardamom powder/cinnamon powder /vanilla essence for flavoring

Method

Ragi oats jaggery cookie

  1. Mix the flour and flouring powder and keep aside.
  2. Mix ghee and jaggery powder till fluffy. If using vanilla essence, add to this mix.
  3. Mix the dry ingredients with the wet ingredients and make a dough. Add milk as required to adjust consistency.
  4. Make dough rolls and keep in the fridge for at least 1 hr for soft cookies.
  5. Preheat oven at 180 degrees.
  6. Make small shapes from the cookie dough and arrange them on the baking tray lined with parchment paper.
  7. Bake at 180 degrees Celsius for 15-18 minutes.

Note

  1. Add salt if desired if using ghee. Salted butter already adds salt to the recipe.
  2. You can experiment with the flavors as per your taste.
  3. Add chopped nuts, and nut butter for added texture.

This recipe uses no salt or leavening agent to make it healthier for the kids. They are excellent as is. You may add 3/4 tsp baking powder if desired.
