DUDHI NO HALVO

Dudh no halvo is a sweet Indian dessert made with bottle gourd, milk, ghee, and sugar and flavored with cardamom and nuts. This is a well known variant of halwa made with a vegetable – here in this case with Bottle Gourd which is also called as Lauki or Ghiya in Hindi and Dudhi in Marathi /Gujarati languages. So this sweet is known by the name ‘lauki ka halwa’ or ‘dudhi halwa’. INGREDIENTS

400 grams dudhi ( Bottle Gourd)

1/2 cup + 2 tbsp sugar ( always can plus n minus)

1.5 tbsp ghee

1 cup milk

1/2 cup milk powder

1 tsp cardamom n nutmeg powder mix

8-10 strings of saffron

1 tbsp Cashew nut chunks

Bottle gourd called lauki or dudhi, In your diet to replenish the body with essential nutrients and fibers without popping pills. It is low in saturated fats and cholesterol, and rich in nutrients such as riboflavin, zinc, iron, magnesium, Vitamin C, etc. It also has anti-oxidation properties along with Vitamin B and C. The loss of fluids can cause kidney stones fluids and induce or aggravate urinary infections.in that case, Add lauki to your diet to break calculus or stones in the body and serve as an alkaline mixture to treat infections. It also helps in relieving liver inflammation.

STEPS TO MAKE DUDHI NO HALVO

STEP 1

Wash n peel the Dudhi n grate with a small hole greater n squeeze it. ( I squeezed it for fast cooking process)

STEP 2

Take ghee in a heavy bottom pan. Add grated dudhi n mix well Put a flame slow n cover the pan for 5 minutes.

STEP 3

When Dudhi starts reducing the volume, Add milk, milk powder, and sugar respectively. Mix well n leave the pan open n stir occasionally.

STEP 4

After reducing the liquid in the mixture, add grounded cardamom n nutmeg, and saffron strings.. Mix it well.

STEP 5

Dudhi Barfi is nearly ready. Prepare the tin, grease with oil n apply parchment paper. Stir the better last time and check, if it is in ball consistency. Transfer the batter in the tray, n let it cool for at least 2 hrs.

STEP 6

After setting the Barfi, remove it from the tin with the paper, sprinkle the cardamom powder n cut it to a diamond shape. Garnish with Cashew chunks. Place them on the tray. Delicious dudhi ni Barfi is ready. Offer to Lord Ganesh as prasad.
