Rajma Salad

Rajma Salad recipe is made by chef Neeta Mehta. Neeta says that she is very cautious about what one should include in his or her daily diet. She says that balanced food is the only key to a good and healthy life. She herself has made this recipe which is delicious and healthy.

INGRIDIENTS

1 cup Onion

1 cup rajma

Spring onion 1

1/2 cup chopped tomatoes

1 cup finely chopped bell peppers (Red – Yellow – Geeen)

1 finely chopped green chilly

4 tbsp chopped coriander

2 tbsp chopped Mint

Salt to taste

Mixed herbs or Oregano 1/2 tsp

Chilly flakes 1/2 tsp

Olives & cranberry (optional)

For Dressing

4 tsp Olive oil

4tsp lemon juice

Salt & Black pepper

STEPS TO MAKE RAJMA SALAD

STEP 1

Wash the rajma & soak in enough water for 6-8 hrs

Drain the water & add the rajma in the pressure cooker.

Add a tsp salt & 2 cups of water & pressure cook till rajma are softened.

Drain the water. ( you can use that water to make dal or kneading paratha dough)

STEP 2

For dressing

Take one bowl Mix olive oil, lemon juice & salt & pepper

dressing for salad

STEP 3

Add all the remaining ingredients & mix well

. Rest for 15 minutes before serving to enhance the flavor.
