Semolina and mixed vegetable dhokla

Normally we make dhokla from besan or special dhokla flour but today I tried with sooji accompanied with mixed vegetables..and it turned out very spongy, yummy, and very tasty.

Semolina and mixed vegetable dhokla is written by Sangita Vyas. Sangita has innovated this recipe from her own experiments and knowledge of the combination of flour and spices.

INGRIDIENTS

  • 1 cup Semolina ( coarse)
  • 3/4 cup curd (medium sour)
  • medium sized 1 carrot (grated)
  • 1 capsicum(chopped)
  • small sized 1
  • tomato(chopped)
  • 1 tblsp ginger chilli paste(crushed)
  • 1/4 cup green coriander (chopped)
  • Spices…( Masala)
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1 tsp black pepper powder
  • 1/4 tsp asafoetida
  • 1 tsp chilli flakes
  • 1 tsp salt (always plus n minus)
  • a sachet of Eno
  • 1 tblsp oil
  • 1 cup water or as required
  • For tempering.. ( vaghar or tadka)
  • 2 tblsp oil
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds
  • 8-10 curry leaves
  • 1/4 tsp asafoetida
  • 1/4 tsp Kashmiri red chilli powder
  • For decoration..
  • 1 tblsp chopped green coriander

NUTRIENTS YOU GET

Semolina is high in protein and fiber and a good source of iron and magnesium. These minerals support red blood cell production, heart health, and blood sugar control.. A diet rich in vegetables can lower blood pressure, reduce the risk of heart disease and stroke, prevent some types of cancer, lower risk of eye and digestive problems, and have a positive effect upon blood sugar, which can help keep appetite in check.

STEPS TO MAKE SEMOLINA AND MIX VEGETABLE DHOKLA

STEP 1

Keep the ingredients ready.

STEP 2

Take Semolina in a bowl, add curd and salt, Mix well, cover with lid n keep aside for at least 10 minutes.

STEP 3

After resting on Semolina, now add all veggies and all spices ( except eno) as shown in the picture, mix gradually, add water and mix well. Pls, note: make the batter in semi-thick consistency, and taste to make sure if something is less. Beat the batter to get more aeration for the best results.

STEP 4

Heat a steamer with water, Grease the steel plate with oil, Add one tbsp oil,eno, and a small amount of water to it. Mix slowly and pour the batter into the plate, Spread the batter equally and cover it with a lid,

STEP 5

Let it steam fr approx 20 minutes. Remove from the steamer, let it cool down then give it square cuts.

STEP 6

Now is temper time. Take a small pan, add oil, crackle the mustard seeds, sesame seeds, curry leaves, asafoetida, and last add Kashmiri red chili powder. Spread it on the dhokla with the spoon. Lastly, garnish with chopped coriander.

TEP 7

Our delicious yummy dhokla is ready.. Serve with tea, sauce, chutney, or eat it all alone..

  1. Rawa/sooji dhokla is a healthy and tasty snake……I made it only with rawa and curd……after reading your recipe I will surely make it with adding veges.thanks for sharing Sangita👍
