કઢી બનાવા માટે ની સામગ્રી

. દહીં ૩ બાઉલ
. બેસન ૨ બાઉલ
.પાણી ૩ ગ્લાસ
.લીલા ચણા ૨ વાડકી
.લીલું લસણ ૨ નાની વાડકી
.લીલા ધાણા ૧ વાડકી
.મીઠું ૨ ચમચી નાની અથવા સ્વાદ પ્રમાણે

કઢી નો વઘાર કરવા માટે ની સામગ્રી

.ઘી ૨-૩ ચમચા
.જીરું ૨ ચમચી
.લસણ કચરેલા ૧૦-૧૨
.લીલા મરચા ક્રશ કરેલા ૭-૮
.રાઈ ઓપ્શનલ ૧/૨ ટી સ્પૂન

કઢી બનાવવા માટે સૌ પ્રથમ એક તપેલી માં દહીં લઈશું બાદ માપ પ્રમાણે બેસન લઈશું બીજી બાજુ ચણા ને કૂકર માં બાફવા મૂકી દઈશું બેસન અને દહીં ને સરખી રીતે મિક્સ કરીશું જે થી ગાંગડા ના પડી જય. પછી આપણે માપ પ્રમાણે પાણી ઉમેરીશું અને કઢી ને ઉકાળવા મુકીશું

હવે બીજા ગેસ પાર વઘરિયું મુકીશું અને તેમ માપ પ્રમાણે ઘી મુકીશું . ઘી ગરમ થાય એટલે તેમાં જીરું નાખીશું અને તેને કથ્થાઈ થવા દઈશું,ત્યેરબાદ તેમાં કચરેલુ લસણ અને લીલા મરચા નાખીશું .ગેસ ધીમો રાખી લસણ શેકવા દઈશું .

બીજા ગેસ પાર કૂકર માં લીલા ચણા બાફવા મુકીશું અને તેને ૩ થી ૪ સીટી વગાડી ને બરાબર પોચા થવા દઇશું .કૂકર ઠંડુ પડે પછી ચણા ને હાથ થી થોડા મસળી લઈશું .

હવે કઢી ઉકળતી હોય ત્યરે ચણા ને કઢી માં ઉમેરી દઈશું જે થી સરસ મિક્સ થઇ જય .

બીજી બાજુ બાજરી ના રોટલા ની તૈયારી કરીશું અને ગરમાગરમ કઢી અને ઘી થી લાદબાદતો રોટલો પીરશી શું

papdi na lilwa nu shak is a surat special recipe, which you can enjoy during winters in Gujarat. This is a seasonal vegetable and is the most special recipe to serve in marriages.

papdi na lilwa nu shak is made by Rinku Patel.Rinku has learnt this vegetable recipe from her mother in law.The family belongs to surat. There is a well known saying in Gujarati surat nu Jaman ane Kashi nu maran,so there in no doubt in this recipe to be tasty!

INGRIDIENTS

  • 250 gram-surati papadi na Dana
  • 1cup- spinach(optional)
  • 1 cup-coriender
  • 1cup-fresh green garlic
  • 1incj-ginger
  • 8/10 -dry garlic
  • 5/6-green chillies
  • 1inch-fresh turmeric
  • 1tbsp-til
  • 1tbsp-peanuts
  • 1 tbsp- coconut(fresh/powder)
  • 1tsp-sugar(optional)
  • 1tsp-lemon juice
  • 1tsp-dhaniyajeera powder
  • 1/2tsp-turmeric powder
  • 1tsp+garam masala/undhiya masala
  • Salt asper taste
  • 3 tbsp-oil
  • 1/4tsp-hing
  • 1tsp-ajwine
  • 1-dry red chilly (whole)

STEPS TO MAKE PAPDI NA LILWA NU SHAK(SURAT SPECIAL)

STEP 1

Boil papadi Dana in an open pot with boiling water and some salt. keep aside.

STEP 2

Make a green paste in a mixer using til, peanuts, coconut, coriander, palak, green garlic, garlic cloves, ginger, fresh turmeric, green chillies and a pinch of salt. Add some water.

STEP 3

Heat oil in a pan. Add whole red chilly, ajwain and hing for tadka. Add the green paste and saute. Roast green pastes.Let the oil gets separated. keep stirring.Add salt,dhaniyajeera powder,garam masala/undhiya masala.Nowadd,sugar and boiled papadi dana.stir well. Add little water if its needed. Add lemon juice and your sabzi is ready to serve.

STEP 4

keep the lid open while cooking the sabji,to maintain its green colour. Add water as per your choice.As you want as a gravy sabzi/dry sabzi.Its totally depends on you.

INGRIDIENTS FOR BLACK SESAME FUDGE

1 bowl black sesame

1/2 bowl round

1 small bowl of dates (seeds extracted)

ginger 1 teaspoon

1 teaspoon paprika root (lumps)

1 teaspoon gond

2/3 teaspoon olive oil or sesame oil

2 tablespoons topra

1 small bowl of dried fruit nuts and cashews

1 tablespoon poppy seeds

STEPS TO MAKE BLACK SESAME FUDGE

STEP 1
First put a teaspoon of olive oil or sesame oil in a loaf and saute the glue. All the glue should break.
Then crush the black sesame seeds in the mix with plus mode. Then add jaggery and B extracted dates and crush again.
Now add ginger, paprika root, a little topra khamna, a few nuts, fried gum, a few dried fruits and mix again for a while.

STEP 2
Then remove to a large bowl and mix in the black sesame seeds and spices. Now mix the remaining few dry fruits and olive oil. Add poppy seeds and set aside in a bowl. Invert this bowl in a serving dish and it will come out nicely. Serve it garnished with crushed dried fruit topra and brain bean.

1 bowl black millet flour

1/2 bowl curd

2 tbsp chopped fenugreek leaves

2 tbsp chopped corriender leaves

1 small bowl grated paneer

1 no. Chopped onion

1 tbsp red chilli powder

Cumin powder 1tsp

1 tsp cumin seeds

sesame seeds 1tsp

sugar (optional) 1tsp

1 tbsp ginger garlic chilli paste

1 tsp Dry fenugreek leaves (kasuri methi)

Salt as per taste

Water if needed

A pinch of bicarbonate soda Oil for frying

STEPS TO MAKE BAJRI CHARMARIYA

STEP 1

Make all ingredients handy and add them in a big bowl.
