જય શ્રી કૃષ્ણ આજે આપણે શિયાળા માટે ઢોકળા બનાવાની રીત શીખીશું .ઢોકળા આપણે જયારે પણ બનાવીયે તયારે જે ધાન આપણા ઘર ના માણસો ના ખાતા હોય તે ઉમેરીયા તો ઢોકળા મારફતે એ ધાન ઘર ના સભ્યો ને ખવડાવી શકીયે .વળી અલગ અલગ ધાન ખાઈશું તો ઇમ્મુનીટી પણ વધશે અને નાની ઉમર માં કોઈ રોગ પણ નહિ પેસે ઢોકળા એક એવી આઇટમ છે કે જે પુરી દુનિયા મા પ્રચલિત છે કેમ કે તે ઘણી વિવિધ રીતે બની શકે છે

શિયાળા માટે ઢોકળા ની જરૂરી સામગ્રી

  • ઢોકળા : ખીરૂ બનાવા
  • સૂજી 1 વાટકી
  • ઓટ્સ 1/2 વાટકી
  • દહી 1 વાટકી
  • પાણી 1.5 -2 વાટકી અથવા જરૂર મુજબ
  • સોડા 1 ચમચી
  • મીઠું 2 ચમચી અથવા જરૂર મુજબ

વઘાર માટે
તેલ ૨ ચમચા
રાય ૧ ચમચી
લીલા મરચા કાપેલા ૨_૩
હિંગ ૧ નાની ચમચી

૧ .સૌ પ્રથમ જે થાળી માં ઢોકળા બનાવા હોય તેને સારી રીતે તેલ ચોપડી ને તૈયાર કરી દો.ત્યેર બાદ ગેસ પાર ઢોકળીયુ મૂકી દો.ઢોકળીયા માં એક ગ્લાસ પાણી મૂકી તેના પર કાંઠો મુકવો અને ગેસ ચાલુ કરી પાણી ને ઉકાળવા દેવું.થોડી વાર બાદ ગ્રીસ કરેલી થાળી પણ મૂકી દેવી.

૨. બીજી બાજુ એક મોટા વાડકા માં સોજી ,ઓટસ,દહીં ને પાણી ભેગું કરવું જરૂર પ્રમાણે પાણી નાખવું. વિડિઓ માં બતાયા પ્રમાણે ખીરું થઇ ગયું હોય તો તેમાં સોડા નાખવો.


૩. સોડા નાખી બરાબર હલાવી ને ખીરું અપડે ગરમ કરવા મુકેલા ઢોકળીયા માં થાળી માં રેડવું.


૪. હવે ઢોકળીયા ને ઢાંકી ને ૧૦ થી ૧૫ મિનિટ થવા દેવું .


૫. ૧૫ મિનિટ પછી ડીશ બાર કાઢી લેવી અને તેને ૫ મિનિટ માટે ઠંડી થવા દેવી


૬. બીજી બાજુ તેલ ગરમ કરી તેમાં રાય હિંગ માર્ચ અને હિંગ નો વઘાર કરવો


૬. હવે ડીશ પાર તૈયાર કરેલો વાઘેર રેડવો

Steps To Make Palak Papdi Snack Recipe

In a big flat vessel, add besan and all the above-listed ingredients. Crush palak in the mixer and make it puree. Add all dry masala and palak puree in besan.

Mix the flour and all other ingredients thoroughly and form a dough. You can add little water if your palak puree is fewer .make sure to make a dough like roti so you can easily flatten. Make stips to get feel like papdi.Fry the papdi in oil till the colour changes a little.

INGRIDIENTS FOR BESAN MIRCHI WITH ALOO PARATHA

For Bharwan Mirch:

Mustard Oil(सरसों का तेल) – 1 Tsp

Cumin Seeds(जीरा) – 1/2 Tsp

Asafoetida(हींग) -1/4 Tsp

Gram Flour(बेसन) – 1 Bowl

Coriander Powder(धनिया पाउडर) – 1 Tsp

Turmeric Powder(हल्दी पाउडर) – 1/2 Tsp

Dried Mango Powder(अमचूर पाउडर) – 1 Tsp

Salt(नमक) – As per taste

Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) – 1/2 Tsp* Pickle Oil(अचार का तेल)

Some * Big Green Chilli(बड़ी हरी मिर्च) – 250 Gram/6 Pieces

Mustard Oil(सरसों का तेल)

For frying For Aloo Parantha:

Potato(आलू) – Boiled & Grated

Coriander Leaves(धनिया पत्ती) – Finely chopped

Green Chilli(हरी मिर्च) – 1-2 Finely Chopped

Wheat Flour(गेहूं का आटा) – 1 Big Bowl

Salt(नमक) – As per taste

Baking Powder(बेकिंग पाउडर) – 1/2 Tsp

Oil(तेल) – Some

STEPS TO MAKE BESAN MIRCHI WITH ALOO PARATHA

STEP 1

For Besan Mirchi, keep the pan on the flame, put Mustard Oil, Cumin Seeds, Hing Powder and some Gram Flour. Roast it on a slow flame and take it out in a bowl.

STEP 2

Then put Coriander Powder, Turmeric Powder, Dried Mango Powder, Salt to taste, Kashmiri Red Chili Powder, and Pickle Oil and mix it well.

STEP 3

Take a Big Green Chillies and slit them like this keeping them join on the other side. In the center fill the stuffing in it .Fry the stuffed Chili until they get golden brown from all the sides as shown in the video. Then sprinkle some stuffing on chilies and cook it for 5-7 minutes.

STEP 4

For Parantha, in a bowl, take some boiled & grated Potato, finely chopped Coriander Leaves & Green Chilli, some Wheat Flour, Salt to taste, and Baking Powder. Mix them all properly and bind the dough without using Water.

STEP 5

Apply some Oil on it and make dough balls. Sprinkle some Wheat Flour and roll it and give it a round shape by using a plate. Then cut it into 4 pieces and roast it on a Tawa by applying some Oil on it and make it crispy.

STEP 6

Serve the tasty and crispy Parantha with Stuffed Chillies. In this way, street style Parantha & Bharwan Mirch will get ready at home.

Semolina and mixed vegetable dhokla

Normally we make dhokla from besan or special dhokla flour but today I tried with sooji accompanied with mixed vegetables..and it turned out very spongy, yummy, and very tasty.

Semolina and mixed vegetable dhokla is written by Sangita Vyas. Sangita has innovated this recipe from her own experiments and knowledge of the combination of flour and spices.

INGRIDIENTS

  • 1 cup Semolina ( coarse)
  • 3/4 cup curd (medium sour)
  • medium sized 1 carrot (grated)
  • 1 capsicum(chopped)
  • small sized 1
  • tomato(chopped)
  • 1 tblsp ginger chilli paste(crushed)
  • 1/4 cup green coriander (chopped)
  • Spices…( Masala)
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1 tsp black pepper powder
  • 1/4 tsp asafoetida
  • 1 tsp chilli flakes
  • 1 tsp salt (always plus n minus)
  • a sachet of Eno
  • 1 tblsp oil
  • 1 cup water or as required
  • For tempering.. ( vaghar or tadka)
  • 2 tblsp oil
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds
  • 8-10 curry leaves
  • 1/4 tsp asafoetida
  • 1/4 tsp Kashmiri red chilli powder
  • For decoration..
  • 1 tblsp chopped green coriander

NUTRIENTS YOU GET

Semolina is high in protein and fiber and a good source of iron and magnesium. These minerals support red blood cell production, heart health, and blood sugar control.. A diet rich in vegetables can lower blood pressure, reduce the risk of heart disease and stroke, prevent some types of cancer, lower risk of eye and digestive problems, and have a positive effect upon blood sugar, which can help keep appetite in check.

STEPS TO MAKE SEMOLINA AND MIX VEGETABLE DHOKLA

STEP 1

Keep the ingredients ready.

STEP 2

Take Semolina in a bowl, add curd and salt, Mix well, cover with lid n keep aside for at least 10 minutes.

STEP 3

After resting on Semolina, now add all veggies and all spices ( except eno) as shown in the picture, mix gradually, add water and mix well. Pls, note: make the batter in semi-thick consistency, and taste to make sure if something is less. Beat the batter to get more aeration for the best results.

STEP 4

Heat a steamer with water, Grease the steel plate with oil, Add one tbsp oil,eno, and a small amount of water to it. Mix slowly and pour the batter into the plate, Spread the batter equally and cover it with a lid,

STEP 5

Let it steam fr approx 20 minutes. Remove from the steamer, let it cool down then give it square cuts.

STEP 6

Now is temper time. Take a small pan, add oil, crackle the mustard seeds, sesame seeds, curry leaves, asafoetida, and last add Kashmiri red chili powder. Spread it on the dhokla with the spoon. Lastly, garnish with chopped coriander.

TEP 7

Our delicious yummy dhokla is ready.. Serve with tea, sauce, chutney, or eat it all alone..

1/2 bowl curd

2 tbsp chopped fenugreek leaves

2 tbsp chopped corriender leaves

1 small bowl grated paneer

1 no. Chopped onion

1 tbsp red chilli powder

Cumin powder 1tsp

1 tsp cumin seeds

sesame seeds 1tsp

sugar (optional) 1tsp

1 tbsp ginger garlic chilli paste

1 tsp Dry fenugreek leaves (kasuri methi)

INGRIDIENTS TO MAKE DALWADA

  • 1 cup- chana daal
  • 1 cup- split moong daal
  • 3- green chillies
  • 1 Inch- ginger
  • 12- cloves of garlic
  • Handful of green coriander
  • 1- onion
  • 1 tsp- jeera
  • 1/8 tsp- hing
  • Salt as per taste
  • Oil for frying
  • Green chillies
  • ,green chutni for serving

STEPS

STEP 1

Soak both daals in different pots for at least 4 to5 hours. After 4/5 hours strain the water from daals and grind them into the mixer. Don’t make smooth paste,but grind it coarsely. Add ginger garlic chillies and coriander in daals. grind them too.

STEP 2

After grinding the dals .mix the coarsely grind daals together. add salt,hing and jeera.mix well for at least 2 to 3mins

STEP 3

Make small balls from daal’s mixer and fry them into hot oil keep stirring for next 3/4 mins

STEP 4Your delicious, mouthwatering,protein rich snack ready to eat….serve vadas with fried chilled, slides onions and green chutney.enjoy👍🏻

Sev khamni recipe is made by saheli kokila Shah, although she expresses her gratitude towards her friend from whom she learned this recipe. She says that food should not be wasted so this recipe is made from leftover dhokla. Dhokla is a good source of protein. Onion and pomegranate are good antioxidants.

INGRIDIENTS

1.Pre-made dhokla – 2 cups

Oil – 1 tbsp

Mustard seeds (rai) – 1/2 tsp

Cumin seeds (jeera) – 1/2 tsp

Asafoetida (hing) – 1/4 tsp

Diced onion – 1/2 cup

Salt and chilly paste – as per taste

Sugar – optional

Corriander – to garnish

Pomegranate seeds – to garnish

Sev – to garnish

STEPS TO MAKE SEV KHAMNI

STEP 1

Lightly crush your pre-made dhokla. Take oil in a pan for tempering. Add mustard seeds, cumin seeds in the oil. Add asafoetida (hing) once they crackle. Now add onions and salt and sauté for some time. Once the onions are cooked add the crushed dhokla and give it a nice mix. You can also add sugar and green chilly paste as per your taste.

STEP 2

Now garnish with sev, diced onion, pomegranate seeds and coriander.

  7. 2tbsp – ghee or oil or butter (as per choice)

HOW TO MAKE BREAD DHOKLA

  1. In a bowl mix yogurt and fresh shredded coconut.
  2. To the mixture add ginger-green chilly paste and salt as per taste.
