Chat Masala by Chef: Dhruti Punch
Dhruti says that this authentic chat masala recipe has been passed on as a family tradition from her mother-in-law to her. Today she would like to share this traditional recipe with perfect measurements with all her Super Saheliya friends. She says that even though chat masala is readily available in the market it is very important to develop your skills and by making chat masala at home we can ensure that there is no adulteration in the recipe, hence giving us a peace of mind.
Ingredients
The below mentioned ingredients can make chat masala of 100g
- Dry Whole Coriander Seeds (सूखा साबुत धनिया ) – 3 tbsp
- Cumin Seeds (जीरा ) – 2 tbsp
- Fennel Seeds (सौंफ) – 1 tbsp
- Carom Seeds (अजवाइन) – 1 tsp
- Black Pepper (काली मिर्च ) – 1 tsp
- Asafoetida (हींग ) – 2-3 pinches
- Black Salt (काला नमक ) – 1 tsp
- Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च पाउडर ) – 1 tsp
- Salt (नमक ) – 1 tsp
- Ginger Powder (सौंठ/अदरक पाउडर ) – 1/4 tsp
- Mango Powder (अमचूर पाउडर ) – 1.5-2 tbsp
- Amla Powder/Gooseberry Powder (आमला पाउडर) – 1-1.5 tbsp
How to make Chat Masala
STEP 1
- Take a pan, put some Dry Whole Coriander Seeds, Cumin Seeds, Fennel Seeds, Carom Seeds, Black Pepper and roast these spices and turn off the flame.
STEP 2:
- Let the spices for cooling down and then put all these spices in a mixer jar.
- Do not start the mixer yet, wait for the next step
STEP 3
- Put some Asafoetida, Black Salt, Kashmiri Red Chili Powder, Salt, Ginger Powder, Mango Powder, Amla (Gooseberry) Powder in the mixer jar
- Grind them altogether.
STEP 4
- Then sieve the masala with a strainer and put it in a fresh jar
- Store it in a cool and dry place
