In this recipe she is sharing is also the healthy version of fried Roasted Bread Pakoda. She has made this recipe for her dear husband Bharat Shah

Bharat Shah (Husband of Kokila Shah)

INGRIDENTS FOR ROASTED BREAD PAKODA

  1. 2 sweet potato
  2. 4 potaotes
  3. 1 onion
  4. 1 grated carrot
  5. 1/2 capsicum
  6. 1/2 bowl chickpea flour
  7. 1tsp ginger chili paste
  8. 1/2 tsp turmeric
  9. 1/2 tsp cumin seeds
  10. salt to taste
  11. pinch of hing
  12. 2tsp coriander leaves
  13. 5-7 curry leaves
  14. 3tsp oil
  15. 8 slices of bread

STEPS TO MAKE ROASTED BREAD PAKODA

Heat 3 tsp of oil in pan and add cumin seeds to it.now add hing ,curry leaves and ginger chilly paste to it.add small cut onion pieces and saute for few seconds. now add grated carrot.let the carrot become soft.now add capsicum and lastly add meshed potatoes and sweet potatoes .add salt and fresh coriander.

mix all the ingridients properly before we proceed to the process of making pakoda.The mixture will look like this

now take one bowl .take chickpea flour add salt and red chilly powder to it and make thick batter.lastly add pinch of eno to the batter.Now take two bread and apply butter to them.now bake both the bread on tawa.now apply vegetable mixture to the bread. On another bread apply chickpea flour batter and roast the bread form the applied batter side.now slowly cover the second bread with meshed potatoes .Also apply chickpea flour to the second bread

now cut the pakoda into two pieces apply chutney grated onion sev and chana dal peanuts and coriander .now its ready to serve

Today she would like to share this traditional recipe with perfect measurements with all her Super Saheliya friends. She says that even though chat masala is readily available in the market it is very important to develop your skills and by making chat masala at home we can ensure that there is no adulteration in the recipe, hence giving us a peace of mind.

Ingredients

The below mentioned ingredients can make chat masala of 100g

  • Dry Whole Coriander Seeds (सूखा साबुत धनिया ) – 3 tbsp
  • Cumin Seeds (जीरा ) – 2 tbsp
  • Fennel Seeds (सौंफ) – 1 tbsp
  • Carom Seeds (अजवाइन) – 1 tsp
  • Black Pepper (काली मिर्च ) – 1 tsp  
  • Asafoetida (हींग ) – 2-3 pinches
  • Black Salt (काला नमक ) – 1 tsp
  • Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च पाउडर ) – 1 tsp
  • Salt (नमक ) – 1 tsp
  • Ginger Powder (सौंठ/अदरक पाउडर ) – 1/4 tsp
  • Mango Powder (अमचूर पाउडर ) – 1.5-2 tbsp
  • Amla Powder/Gooseberry Powder (आमला पाउडर) – 1-1.5 tbsp

How to make Chat Masala

STEP 1
  1. Take a pan, put some Dry Whole Coriander Seeds, Cumin Seeds, Fennel Seeds, Carom Seeds, Black Pepper and roast these spices and turn off the flame.
STEP 2:
  1. Let the spices for cooling down and then put all these spices in a mixer jar.
  2. Do not start the mixer yet, wait for the next step
STEP 3
  1. Put some Asafoetida, Black Salt, Kashmiri Red Chili Powder, Salt, Ginger Powder, Mango Powder, Amla (Gooseberry) Powder in the mixer jar
  2. Grind them altogether.
Add all ingredients in the mixer jar and then grind them
STEP 4
  1. Then sieve the masala with a strainer and put it in a fresh jar
  2. Store it in a cool and dry place
Step 4: Your chat masala is now ready ❤❤

This Tava Pulav is made of lots of vegetables, dry fruits and rice which provides lots of vitamins (A,B,C,E & K) and carbohydrates.

INGREDIENTS

The ingredients mentioned below serves 2 People

  • 2 Cup Basmati Rice
  • 2 Tablespoon Butter
  • 1 Teaspoon Oil
  • 1 Small Onion
  • 1 Tablespoon chopped Capsicum
  • 1 Tablespoon chopped Carrot
  • 1 Table Spoon Peas
  • 3 Green Chilis
  • 1 Teaspoon Ginger Garlic paste
  • 1 Teaspoon green coriander
  • 1 Teaspoon Kaju Draksh
  • 1 Teaspoon Pavbhaji Masala
  • 1 Teaspoon Kashmiri Lal Mirch
  • 1 Teaspoon Turmeric
  • 1 Teaspoon Coriander Powder
  • ½ Teaspoon Chat Masala
  • ½ Teaspoon Pepper Powder

HOW TO MAKE TAVA PULAV

STEP 1

Wash the basmati rice thoroughly for 2-3 times and soak it in water for 30 minutes & keep aside

Finely chop all the vegetables

Take oil and butter in a pan. Fry Cahshew & resin. Add Chopped potatoes and let it get cooked

After potatoes gets cooked, add ginger, garlic paste, green chilies and add all chopped vegetables and mix them properly

Now add all the masalas as mentioned in the ingredient list to cooked rice and mix well.

It is ready to eat. Garnish it with coriander leaves and serve it with slice of onion and lemon.

NUTRIENTS YOU WILL GET FROM LADOO:

This is the traditional sweet made from pure ghee and wheat flour.
Pure ghee makes your bones healthy as well as gives smoothness in your ligaments

INGRIDIENTS

  1. 2 cups wheat flour.
  2. 1/2 cup dried grapes
  3. 2 cups powdered sugar
  4. 1/2 cup almonds
  5. 1 glass of water
  6. 1/2 cup chickpea flour
  7. 2 cups powdered sugar
  8. 1 glass of water
  9. 1/2 cup khas khas

HOW TO MAKE LADOO :

STEP 1

First take wheat flour in a bowl and add ghee to it. Mix both of them together and slowly add water to make hard dough. Once the dough is hard, make small cylindrical shaped pieces (મુઠીયા)

Add the above-mentioned ingredients like this in a bowl

STEP 2

Fry the cylindrical shaped pieces (મુઠીયા) in oil or ghee till they are of golden brown color. make sure to fry it in sim gas. Once they cool down, break them into small pieces and add them into a mixer jar. Further, strain the mixture through a sieve.

Once the pieces are broken like this, then add them to a mixer jar

STEP 3

Then in a pan, bake the chickpea flour and ghee and let it cool down. Then mix the chickpea flour mixture to the small pieces (મુઠીયા). Once both of these are mixed, add dry fruits

Then add powdered sugar, mix ghee and roll into ball shaped ladoo

Gently apply khas khas on ladoo and the traditional Gujarati ladoo recipe is ready! The best way to enjoy this ladoo is with Vaal Subzi and daal bhaat !

NUTRIENTS YOU GET FROM DHOKLA

Ingredients such as Besan and Semolina, they are rich in protein and carbohydrates which helps to maintain the energy of body. Curd is also a very good source of Vitamin B12 and Calcium. Overall, this is a very healthy recipe.

INGREDIENTS

The ingredients mentioned below Serves 2 people

  • 1cup – Rava (Semolina)
  • 1 cup – Besan ( Chana flour)
  • 1 cup – Buttermilk
  • 1/2 cup – Water,
  • 1 tbsp – ginger-green chilly paste
  • 1 tsp – turmeric powder
  • 3 tbsp – oil
  • 1/2 tsp – mustard seeds
  • 1/2 tsp – sesame seeds
  • 6-7 – curry leaves
  • 1 tbsp – fruit salt
  • 1/2 tsp – asafoetida (hing)
  • Salt & sugar as per taste
  • 1tsp – Garlic paste – optional
  • 1-2 whole green chilly – optional
  • Coriander for garnish

HOW TO MAKE INSTANT DHOKLA

STEP 1
  1. Mix and soak rava and besan in buttermilk in a pot.
  2. Adjust the quantity of buttermilk as per your liking of sour taste in dhokla.
  3. Pour water as per requirement.
  4. Add turmeric powder, ginger-green chilly paste ( as per taste ), garlic paste(optional) and 2 tbsp oil to the mixture.
  5. A dash of salt and sugar as per taste.
  6. Let the mixture rest for 15 mins.

  1. While mixture is resting and getting ready, heat 1.5 cups of water in a pot and grease a plate with oil so that the dhokla come out real nice and soft.
  2. After 15 mins add 1 tbsp fruit salt (Green or Blue Sachet of ENO) to the mixture(Batter) of rava and besan.
  3. Heat the greased plate in the boiling water for a couple of minutes.
  4. Pour well mixed batter in the greased plate.

  1. Let it cook for approximately 10-12 mins.
  2. Check if the Dhokla is well cooked by inserting a knife in it. The knife should come out clean.
  3. Once cooked put the plate at a side and let it cool for 5 mins
  4. Then cut them onto square pieces so they are easy to handle

Tempering (Tadka)

  1. Take 2 tbsp oil in a tempering pan and roast mustard seeds, sesame seeds and curry leaves.
  2. Add asafoetida at the end when everything splutters and you can also add pieces of whole green chilly if you prefer spicy.
  3. Pour the tempering on the dhokla.

  1. Half liter milk
  2. 80g of sugar
  3. 30g sev
  4. Few spoons of chopped cashew nuts
  5. 1 teaspoon cardamom nutmeg powder
  6. one tbsp ghee

NUTRIENTS YOU GET FROM SEVAIYA

Ingredients such as milk and dry fruits are rich in Calcium which help to keep bones and immunity strong, they are also a good source of protein. Ghee is also a great ingredient rich in various nutrients and helps in maintaining a strong and healthy body

HOW TO MAKE SEVAIYA FOR RAMADAN

STEP 1

  1. In a saucepan take some ghee, add Sev and roast it for a while
  2. Keep the gas flame slow and make sure that the Sev does not turn red
roast the sev in ghee

STEP 2

  1. Once the sev is roasted, add milk into the saucepan
  2. Bring the milk to a boil on low flame and then add sugar
  3. At this point taste the sweetness and adjust the sugar quantity according to your needs

Note: We recommend that you do not add a lot of sugar since it is very harmful to the body

STEP 3

  1. Add dry fruits into the mixture
  2. Let the mixture boil for another 3-4 minutes

STEP 4

  1. Remove the mixture from the heat and put is aside to cool down
  2. Take a mixture of Cardamom nutmeg powder and Saffron string and add it to the cooling sevaiya
  3. Store the sevaiya in refrigerator for a few hours

STEP 5

Your chilled Sevaiya is now ready to serve. Enjoy it as a side dish with meal or as a dessert after meal

Drumstick comes with huge nutrient values, it is rich in vitamins A, C, K, B and minerals such as calcium, iron and magnesium. It is also a great source of fibre and protein.   1. 250g of drumsticks
  2. 250g of gram flour
  3. Four table spoon oil
  4. Four cloves of crushed garlic
  5. Half teaspoon of turmeric

  8. One teaspoon of hot spices (garam masala)
  9. Salt to taste
  10. Half teaspoon of lemon juice
  11. Green coriander for garnishing

HOW TO MAKE Stuffed Drumstick Sabzi

STEP 1

  1. Thoroughly rinse and clean the drumsticks

STEP 2

  1. Take gram flour in a bowl and add the above mentioned ingredients in it to make the masala for stuffing
Step 2: Prepare the masala for stuffing

STEP 3

  1. Now, make a slight cut through the drumsticks
  2. Stuff the masala prepared in Step 2 in the drumstick
  3. Repeat Step 3 until all drumsticks are filled in a similar way
Step 3: Stuff the drumsticks with prepared masala

STEP 4

  1. Now, place the stuffed drumsticks, add one glass of water in a steam cooker, close the lid of the cooker
  2. Let it steam for 15-20 minutes

STEP 5

  1. Add 3 teaspoons of oil in a saucepan, add mustard seeds
  2. Once mustard seeds star crackling, add garlic and green chili paste, add turmeric
  3. Add a glass of water, once water starts to boil add steamed drumsticks into the saucepan
  4. Add salt to taste
  5. Let it cook for 5 minutes

STEP 6

  1. Your tasty and healthy recipe is now ready to serve
  2. Garnish it with some coriander leaves

Broccoli Panner Tikki is made from broccoli and paneer as the key ingridients. Normally in almost all families, Tikki is basically made from mashed potatoes but here we are using some different vegetables to make our Tikki to be used for breakfast or sometimes as a light dinner. For making broccoli paneer Tikki, the key ingredients are broccoli and paneer. let’s see why we should make broccoli paneer Tikki.

NUTRIENTS YOU GET FROM BROCCOLI

Broccoli is a good source of fiber and protein. It contains iron, potassium, calcium, selenium, and magnesium as well as the vitamins A, C, E, K,. It has a good array of B vitamins including folic acid. According to a study it has been found that consuming steamed broccoli regularly lowers the risk of cardiovascular disease. It helps in reducing the total amount of cholesterol in the body. A key component of broccoli is a phytochemical known as sulforaphane, which also gives broccoli a slightly bitter taste

One cup of raw broccoli contains 25 calories. less It has less than 5 grams of carbohydrate,.It contains no fat, but a few grams of plant protein. Even so, broccoli is chock full of nutrients. One cup cooked provides nearly 250% of the daily target for vitamin K, which helps blood clot and is needed for bone health.

This powerhouse veg also contains plant-based omega-3 fatty acids called alpha-linolenic acid, or ALAs, which are linked to anti-inflammation and improved circulation.

Paneer contains Calcium & Vitamin D, which are responsible for abating the possibility of Breast Cancer.

Paneer is rich in calcium content, and calcium is also known to strengthen both the teeth and bones. Also the intake of calcium also helps in the smooth functioning of the nervous system and the heart muscles stay healthy.

Paneer helps you lose weight as it contains protein that keeps you full for a long time and hence, you don’t end up eating a lot in general. Besides, it also contains a fatty acid that helps in burning quite a lot of fat.

It contains both phosphorus and magnesium. Phosphorus helps in smooth digestion as well as excretion. And magnesium, as a result of having a laxative effect, prevents constipation.

INGRIDIENTS

1 cup finely chopped broccoli
1/2 cup powdered paneer
2 tsp oil
1/2 cup finely chopped onion
2 tsp finely chopped garlic
1 tsp finely chopped green chillies
Salt, to taste
1/2 cup roasted quick cooking rolled oats
1 tsp oil for chopping and cooking

HOW TO MAKE DELICIOUS BROCCOLI PANNER TIKI:

STEP 1:

Heat oil in a wide non-stick pan, add onion, garlic and green chillies and saute on medium heat for 1 to 2 minutes

STEP 2:

Then add broccoli and salt, stir fry over medium heat for 2 to 3 minutes.

STEP 3:
Now take it off the heat and let it cool in a deep bowl. When completely cooled, add oats and paneer and mix well

STEP 4:
Now divide the mixture into 11 equal parts, 20 mm of each part. Make a thin round Tikki of 2 inches

STEP 5: 
Heat a non-stick frying pan and put 1/4 tsp oil on it and cook all the tikkas with 1/2 tsp oil till it turns golden brown on both sides. Serve immediately with green sauce.

1.1 First cut the prepared idli into small cubes as shown in the pic.

1.2 Now Chop some washed coriander and green chilies nicely.
